Halloumi is the new bacon.

It is salty and addictive.
Halloumi is amazing with this corn-avocado salad! It complements beautifully the sweetness of the corn and turns this simple salad in an wholesome and delicious vegetarian meal.

corn-avocado salad with grilled halloumi (print)
recipe adapted from mark bittman
(4 servings)
5 ears fresh corn, stripped of their kernels
1/2 red onion, chopped
1/2 red bell pepper, chopped
1 tomato, seeded and chopped
1 avocado, diced
1/4 cup orange juice
1/2 cup chopped fresh cilantro
salt
pepper
125 g halloumi cheese
2 tortillas
cooking spray
Mix together the corn, onion, red bell pepper, tomato, avocado, orange juice, cilantro, salt and pepper to make a nice salad. Set aside.
Turn on your barbecue. Cut up the cheese in 4 nice slices. Spray some cooking spray on the cheese and on the tortillas. Grill on the barbecue, about 2 minutes on each side for the cheese and about 30 seconds on each side for the tortillas. Cut up the grilled tortillas in 8 pieces.
Make 4 nice plates as can be seen on the picture above.

salade de maïs et d’avocat servie avec halloumi grillé (imprimer)
recette adaptée de mark bittman
(4 portions)
les grains de 5 épis de maïs
1/2 oignon rouge, haché
1/2 poivron rouge, haché
1 tomate, épépinée et hachée
1 avocat, coupé en dés
1/4 tasse jus d’orange
1/2 tasse de coriandre fraîche, hachée
sel
poivre
125 g de fromage halloumi
2 tortillas
enduit à cuisson
Mélanger le maïs, l’oignon, le poivron, la tomate, l’avocat, le jus d’orange, la coriandre, le sel et le poivre pour faire une jolie salade. Réserver.
Allumer le barbecue. Couper le fromage en 4 jolies tranches. Vaporiser le fromage et les tortillas d’enduit à cuisson. Griller le fromage environ 2 minutes de chaque côté et les tortillas environ 30 secondes de chaque côté. Couper les tortillas en 8 pointes
Faire 4 jolies assiettes comme sur la photo ci-dessus.
